Londoners have enjoyed home delivered ‘take-outs’ for generations, however the introduction of ‘apps’ has led to a transformative boom in the take-out industry and is having implications for how we use, plan, build and manage London spaces and streets to accommodate what looks like an irreversible change in how we consume food.
The rise of the ‘dark kitchen’ where the food is prepared has implications for planners and communities – where should they be located, what should they look like and how should they be managed? Where are the current London ‘hotspots’ and what have we learnt so far?
And once your meal has left the kitchen and is on its way to you, how do we ensure the welfare of the delivery drivers and Londoners is ensured? The drivers need access to well maintained toilets and break areas and Londoners need to feel safe on pavements and pedestrianised spaces.
And what does it mean for London’s hospitality industry? Is ‘wok-from-home’ a threat or opportunity to the restaurants who rely on the IRL experience (in-restaurant).
The London Society is hosting a discussion on the future of Dark Kitchens and how this change to our dining habits is impacting on how we plan for London and what changes need to plan for.
